Quick And Easy Salmon Burgers
In the warm weather it's so much easier to make meals on the grill. You don't need to limit yourself to standard beef burgers - there are so many more options (as you can see from my blog posts).
I found this recipe on Pinterest and thought I would give it a try (recipe adapted from http://thinkhom.com/salmon-burger-avocado-salsa/). I wanted to find a healthier burger to include in my family's summer meal rotation. My hubby really enjoyed them which was a relief since he can use a break from his usual red meat burgers
I made this recipe even easier by using a food processor to mix the ingredients. Make sure to only pulse the ingredients a few times (5-7 short intervals) until just combined.
You can either form the patties by hand or use The Burger Master to make eight quarter pound patties. After filling the Burger Master I placed the container in the freezer for a couple of hours to make the patties easier to handle.
Salmon Burgers
yield: 8 burgers
Ingredients
- 2 lbs salmon filet (skin removed), cut into 1 inch pieces
- 1.5 cups seasoned breadcrumbs
- 1/2 cup chopped cilantro
- 2 eggs
- 1/2 cup mayonnaise
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
Combine all ingredients in a food processor, pulse in short intervals until just combined. Form patties and refrigerate until ready to grill.
Serve with Avocado Salsa.
Avocado Salsa
Ingredients
- 2 large avocado, chopped
- 2/3 cup chopped red onion
- 1/2 cup chopped fresh cilantro
- 2 limes, juiced
- 2 tbsp extra virgin olive oil
- 1 tsp red pepper flakes (optional)
- salt and pepper to taste
Combine all ingredients and serve immediately.
