Almond Flour Cookies from JK Gourmet
This year I was fortunate enough to be a part of The Green Living show in Toronto. I was invited by Ronnilyn Pustil, the founder of Gluten Free Garage, Toronto's original pop-up marketplace of all things deliciously gluten free.
At the show I met Jodi Bager, the owner of Grain Free JK Gourmet, a Canadian company with a mandate devoted to making all-natural, preservative-free whole-foods baked goods that taste as good as they are healthy.
Jodi had seen The Smart Cookie online and was excited to test it out with her Almond Flour Cookie Mix. The next morning at the show Jodi offered me one of the cookies she made and I was blown away!
I don't tend to use cookie mixes because I prefer to control the ingredients myself and don't like unnecessary fillers in my baked goods, and I find that as I get older I don't like my desserts to be as sweet, so now I tend to reduce the amount of sugar in my recipes.
Jodi's cookie mix is made from a few simple ingredients - almond flour, organic granulated coconut nectar, salt and baking soda. It is also very simple to make, you don't even need a mixer because unlike a standard cookie recipe where the butter needs to be beaten with eggs and sugar, this mix just calls for 1/2 cup melted butter and 1/4 cup water, that's it! Just mix by hand and toss in whatever additions you choose (I used roasted almonds and some chocolate chips).
This cookie has so much flavour and it is not too sweet, the melted butter makes the cookie moist and chewy............
mmmmmmmm, I might have to go back to the kitchen to bake another one, it is sooooo good.
