Slow Cooker Buffalo Chicken Wraps
For those days when you don't have the time (or the energy) to prepare a meal, the slow cooker is the perfect tool!
This weekend I was out doing my holiday shopping and knew that I wouldn't have much time (or energy) to make dinner so before I left the house I tossed the following ingredients in the slow cooker so that I could come home to a delicious meal of Buffalo Chicken Wraps.
Ingredients
- 4 bone in chicken quarters (or 2 pounds chicken breast)
- 1 small onion, quartered
- 2 celery ribs
- 2 cloves garlic
- 4 cups chicken broth (or enough to cover all the ingredients)
Place all the ingredients in the slow cooker. Cook on High for 3-4 hours or on low for 6-8 hours.
Remove the chicken from the slow cooker, if using chicken quarters remove the meat from the bones. Reserve 1/2 cup of the broth and discard the remaining ingredients from the slow cooker.
Return the chicken to the slow cooker with the reserved chicken broth and 1/2 cup hotsauce, stir to coat the chicken with the liquids. Cook on high for 20 minutes to thicken the sauce.
In the meantime, prepare the garnishes for the wraps:
- 8 small soft tortillas
- shredded cheese
- lettuce
- blue cheese dressing
- shredded carrots
- red onion, sliced (optional)
- sliced red peppers
After 20 minutes, serve the chicken straight from the slow cooker and build your wraps. If you are eating low carb you can use Boston Lettuce to make the wraps instead of the tortillas.
