Oatmeal Toffee Cookies
Makes: 20 cookies

Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 1/4 cup rolled oats
- 1/2 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup dark chocolate chips
- 1/4 cup toffee pieces
Directions
- Preheat oven to 375F.
- in a large bowl, cream together the butter, brown sugar, white sugar, and egg until smooth.
- Mix in the flour, baking soda and salt.
- Stir in the oats, chocolate chips and toffee pieces.
- Spread half of the cookie dough into the bottom tray of a Smart Cookie container. Place the lid on top to form the cookie pieces. If the dough is too sticky to remove, place in the fridge for an hour.
- Remove the cookie pieces onto a parchment lined baking sheet. Bake for 8 - 12 minutes (for chewy cookies bake for 8-10 minutes, for crispy bake for 12 minutes or until browned on top)
